Café de Paris has a particularly interesting connection to the beloved Café au Lait dahlia. It originated as a sport of Café au Lait, giving gardeners the familiar romantic coloring of the Café family in a dramatically different flower form.

The variety was first propagated by H. & B. van den Bosch in 2019, named in 2020, and registered by Fred de Meulder Export BV in 2021.

Its flowers can reach approximately 7 inches across and feature pale pinkish-cream petals accented with lavender-pink toward the tips. One of its most appealing characteristics is its color variation—blooms may lean creamy beige, blush pink, peach, or mauve depending on the flower and growing conditions.
